- 2 chipotle peppers in adobo sauce
- ½ cup ranch dressing
- 1 cup bell peppers (sliced, any color)
- ½ cup sweet onion (sliced)
- 4 large flour tortillas
- 1 cup romaine or iceberg lettuce (shredded)
- ¼ cup fresh cilantro (optional)
Instructions
- Prepare marinade by blending chipotle peppers with ranch dressing until smooth.
- Marinate chicken breasts in the mixture for at least 30 minutes in the refrigerator.
- Preheat grill to medium-high heat; grill chicken for about 6-7 minutes on each side until cooked through.
- Sauté sliced bell peppers and onions in a skillet over medium heat until soft and caramelized (about 5-7 minutes).
- Assemble burritos by layering grilled chicken, sautéed veggies, lettuce, and additional ranch dressing on each tortilla.
- Wrap tightly and slice diagonally before serving.
