- 2 lbs boneless chuck roast
- 4 French rolls or baguettes
- 4 cups low-sodium beef broth
- 1 large yellow onion, sliced
- 2 cloves garlic, minced
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C). Season the chuck roast with salt and pepper, then sear it in a skillet over medium-high heat until browned on all sides.
- Transfer the roast to a slow cooker. Add sliced onions, minced garlic, beef broth, and Worcestershire sauce. Cover and cook on low for about 6 hours or until the beef is fork-tender.
- Let the roast rest for 10 minutes before slicing thinly against the grain. Lightly toast the French rolls under the broiler.
- Assemble sandwiches by layering sliced beef onto each toasted roll and ladling some of the broth over it. Serve hot with small bowls of au jus for dipping.
