Ingredients

  • 2 lbs boneless chuck roast
  • 4 French rolls or baguettes
  • 4 cups low-sodium beef broth
  • 1 large yellow onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C). Season the chuck roast with salt and pepper, then sear it in a skillet over medium-high heat until browned on all sides.
  2. Transfer the roast to a slow cooker. Add sliced onions, minced garlic, beef broth, and Worcestershire sauce. Cover and cook on low for about 6 hours or until the beef is fork-tender.
  3. Let the roast rest for 10 minutes before slicing thinly against the grain. Lightly toast the French rolls under the broiler.
  4. Assemble sandwiches by layering sliced beef onto each toasted roll and ladling some of the broth over it. Serve hot with small bowls of au jus for dipping.
