  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for filling)
  • Milk (to achieve desired frosting consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream softened butter and granulated sugar until light and fluffy. Mix in creamy peanut butter, egg, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Scoop dough onto prepared baking sheets about 2 inches apart. Bake for 10-12 minutes until edges are golden.
  6. While cooling, mix powdered sugar with peanut butter and enough milk to create a frosting-like filling.
  7. Once cooled, spread the filling on one cookie half and sandwich it with another.
