- 1 cup powdered sugar (for filling)
- Milk (to achieve desired frosting consistency)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream softened butter and granulated sugar until light and fluffy. Mix in creamy peanut butter, egg, and vanilla until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Scoop dough onto prepared baking sheets about 2 inches apart. Bake for 10-12 minutes until edges are golden.
- While cooling, mix powdered sugar with peanut butter and enough milk to create a frosting-like filling.
- Once cooled, spread the filling on one cookie half and sandwich it with another.
