Ingredients
- 3–4 boneless, skinless chicken breasts
- 1 cup fresh basil pesto (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 1 cup cherry tomatoes (halved)
- 2 tablespoons olive oil
- ½ cup heavy cream
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Season both sides of the chicken breasts with salt and pepper; place them in the baking dish.
- Spread pesto generously over each chicken breast.
- Sprinkle mozzarella cheese over the pesto-covered chicken and scatter halved cherry tomatoes around.
- In a saucepan over medium heat, warm the heavy cream with any remaining pesto; do not boil.
- Pour the cream sauce over the chicken and bake uncovered for 25-30 minutes until cooked through.
