Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, warm olive oil and sauté minced garlic until fragrant, about 30 seconds.
- Add fresh spinach and cook until wilted, stirring occasionally.
- In a bowl, combine the wilted spinach with cream cheese, Parmesan cheese, lemon juice, salt, pepper, and herbs. Mix until smooth.
- Place each salmon fillet skin-side down on a cutting board. Spoon the filling onto each fillet and fold them over gently.
- Arrange the stuffed salmon on a greased baking sheet and bake for 20-25 minutes or until cooked through.
