- 4 bell peppers (red or yellow)
- 1 cup cooked rice (white, brown, or quinoa)
- 1 lb ground turkey or beef (optional)
- 1 onion, chopped
- 1 cup tomato sauce
- Spices (cumin, paprika)
- Cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C). Wash and prepare the bell peppers by slicing off the tops and removing seeds.
- In a skillet over medium heat, sauté chopped onions until translucent. If using ground meat, add it now and cook until browned.
- Stir in the cooked rice, tomato sauce, and spices. Let simmer for about 5 minutes.
- Stuff each pepper with the rice mixture, packing it lightly.
- Place stuffed peppers upright in a baking dish. Cover loosely with foil and bake for 30 minutes until tender.
- If desired, uncover and sprinkle cheese on top; bake uncovered for an additional 10 minutes until melted.
