- 8 oz cream cheese, softened
- 1 cup sour cream
- 1/2 cup granulated sugar
- 2 ripe peaches, diced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 1/2 cups graham cracker crumbs
- 1/4 cup butter, melted
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press into the bottom of a greased springform pan.
- In another bowl, beat cream cheese and sugar until smooth. Mix in sour cream until well combined.
- Gently fold in diced peaches and mixed berries into the cream cheese mixture.
- Pour the mixture over the crust in the springform pan and smooth the top.
- Bake for 30-35 minutes until set but slightly jiggly in the center. Let cool at room temperature before refrigerating for at least four hours.
- Once chilled, release from the pan and slice into wedges. Serve topped with extra berries or whipped cream if desired.
