  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup granulated sugar
  • 2 ripe peaches, diced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press into the bottom of a greased springform pan.
  2. In another bowl, beat cream cheese and sugar until smooth. Mix in sour cream until well combined.
  3. Gently fold in diced peaches and mixed berries into the cream cheese mixture.
  4. Pour the mixture over the crust in the springform pan and smooth the top.
  5. Bake for 30-35 minutes until set but slightly jiggly in the center. Let cool at room temperature before refrigerating for at least four hours.
  6. Once chilled, release from the pan and slice into wedges. Serve topped with extra berries or whipped cream if desired.
