- 1/2 cup diced bell peppers
- 1/4 cup chopped onions

- Fresh herbs (parsley or basil) for garnish
- Salsa or hot sauce (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the muffin halves on a baking sheet and lightly toast them for extra crunch.
- Spread a generous layer of shredded cheese over each muffin half.
- In a skillet, scramble the eggs seasoned with salt and pepper until fluffy; distribute evenly over the cheesy muffins.
- Top with cooked bacon or sausage and scatter fresh veggies on top.
- Bake for 10-12 minutes until heated through and cheese is bubbly.
- Garnish with fresh herbs and serve hot.
