Ingredients
- 3–4 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 tablespoon Dijon mustard
- Olive oil for cooking
Instructions
- 1. Season chicken breasts generously with Cajun seasoning.
- 2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
- 3. Remove chicken and set aside. In the same skillet, reduce heat and sauté minced garlic for one minute.
- 4. Add chicken broth, scraping up browned bits from the pan. Stir in heavy cream and Dijon mustard; simmer until thickened (about 5 minutes).
- 5. Return chicken to the skillet, spooning sauce over it. Simmer together for a few more minutes.
- 6. Serve hot with rice or pasta.
