Ingredients
- 2 lbs Yukon Gold or red potatoes
- 4 cloves fresh garlic, minced
- ½ cup freshly grated parmesan cheese
- 3 tbsp olive oil
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut the potatoes into 1-inch cubes for even cooking.
- In a large bowl, toss the cut potatoes with olive oil, minced garlic, salt, pepper, and half of the grated parmesan cheese until evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes until golden brown and crispy; stir halfway through for even cooking.
- Sprinkle the remaining parmesan cheese and chopped parsley over the hot potatoes and return them to the oven for an additional 5 minutes to melt the cheese.
