- 1 cup plain yogurt
- 4 cloves fresh garlic (minced)
- 1 tbsp fresh ginger (grated)
- 2 tbsp tikka masala spice mix
- 1 can (400g) whole tomatoes
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, combine yogurt, minced garlic, grated ginger, and tikka masala spice mix. Add chicken pieces and marinate for at least 1 hour (or overnight).
- Heat oil in a large skillet over medium heat. Sauté minced garlic and ginger until fragrant.
- Add marinated chicken to the skillet and cook until browned (about 7-10 minutes).
- Stir in canned tomatoes and coconut milk, bringing the mixture to a gentle simmer for 15-20 minutes until thickened.
- Taste and adjust seasoning with salt if needed. Garnish with chopped cilantro before serving.
