- 1 lb lean ground beef
- 1 cup orzo pasta
- 2 large ripe tomatoes, diced
- 1 medium red onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped red onion and minced garlic until fragrant (about 2 minutes).
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned (around 5 minutes).
- Stir in diced tomatoes and pour in beef broth; sprinkle with oregano. Bring to a simmer.
- Add orzo pasta and cook on low heat for about 10 minutes until al dente, stirring occasionally.
- Serve hot with an extra drizzle of olive oil if desired.
