- 1 lb lean ground turkey (93% lean)
- 2 medium zucchinis, diced
- 1 cup bell peppers, chopped (any color)
- 1 medium onion, finely chopped
- 2 tsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Wash and chop zucchini, bell peppers, and onion into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Sauté onion until softened (about 3 minutes).
- Add zucchini and bell peppers; cook until tender (approximately 5 minutes).
- Push veggies to the side of the skillet and add ground turkey. Cook until browned (5-7 minutes), breaking it up as you go.
- Season with garlic powder, salt, and pepper; mix everything well.
- Lower heat and let simmer for an additional 5 minutes to meld flavors.
- Serve warm, garnished with fresh parsley.
