- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced (about 2 cups)
- 1 cup bell peppers, chopped (any color)
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Prepare all ingredients by dicing the sweet potatoes, chopping the bell peppers and onion, and mincing the garlic.
- Heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté until fragrant (about 3 minutes).
- Add diced sweet potatoes to the skillet; cook for about 5 minutes until slightly softened.
- Push sweet potatoes aside and add ground turkey. Season with cumin, paprika, salt, and pepper; cook until browned (about 6 minutes), breaking it apart as needed.
- Mix everything together once the turkey is cooked through. Stir in bell peppers; let simmer for an additional 5 minutes to meld flavors.
- Serve hot straight from the skillet or transfer to plates.
