- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, thinly sliced
- ¼ cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1 tbsp honey
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Chop chicken into bite-sized pieces. Dice the bell peppers and slice the onion.
- In a bowl, whisk together soy sauce, brown sugar, honey, minced garlic, salt, and pepper.
- Spread chicken, bell peppers, onion, and pineapple on the baking sheet. Drizzle sauce over everything.
- Bake for 25-30 minutes until golden brown and cooked through.
- Serve immediately with any leftover sauce drizzled over the top.
