Instructions
- Prep your veggies by washing and chopping the onions, carrots, and celery.
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent.
- Add carrots and celery; cook for about five minutes until slightly softened.
- Stir in lentils and vegetable broth; bring to a boil then reduce to a simmer.
- Season with thyme, salt, and pepper. Simmer uncovered for 30-35 minutes until lentils are tender.
- Optional: Blend briefly for a creamier texture while leaving some chunks for added interest.
- Serve hot with crusty bread or fresh herbs on top.
