- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 cup granulated sugar
- 3 large eggs (room temperature)
- 1 cup whole milk
- ½ cup unsalted butter (melted)
- 2 cups tart cherries (fresh or canned)
- 2 cups heavy whipping cream
- ¼ cup powdered sugar
- Chocolate shavings for garnish
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans with butter; dust with cocoa powder.
- In a bowl, mix flour, cocoa powder, baking powder, sugar, eggs, milk, and melted butter until smooth.
- Divide batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
- Prepare cherries by pitting and mixing with powdered sugar if using fresh; drain canned cherries.
- Whip heavy cream with powdered sugar until soft peaks form.
- Assemble the cake: layer one cake on a serving plate, spread half the cream and layer half the cherries. Repeat with the second layer. Top with chocolate shavings before serving.
