- 1 lb boneless chicken thighs
- 12 Hawaiian rolls
- 1 cup barbecue sauce
- 1 cup shredded cheese (Monterey Jack or cheddar)
- 1 cup coleslaw
Instructions
- Preheat grill or oven to medium heat.
- Season chicken thighs with salt and pepper; grill for 6-8 minutes per side or bake at 375°F for about 25 minutes until cooked through.
- Shred the chicken using two forks and mix with barbecue sauce in a bowl.
- Slice Hawaiian rolls horizontally without separating them completely. Spoon BBQ chicken onto each roll and top with shredded cheese.
- Place under broiler for 1-2 minutes until cheese is bubbly.
- Add coleslaw on top of each slider and serve hot.
