Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter in a bowl, then press into the base of a springform pan.
- Bake crust for 10 minutes until golden, then let cool.
- In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, sour cream, and vanilla, mixing well.
- Add eggs one at a time, blending after each addition. Gently fold in fresh blackberries.
- Pour filling into cooled crust and bake for 55-60 minutes until slightly jiggly in the center.
- Turn off oven and leave door ajar for an hour to cool gradually. Refrigerate for at least four hours before serving.
