- 2 cups fresh peaches, sliced
- 1 ½ cups all-purpose flour
- 1 cup brown sugar (dark preferred)
- 2 tsp baking powder
- ½ cup unsalted butter, room temperature
- 2 large eggs
- 1 tsp vanilla extract
- Powdered sugar (for dusting)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Wash and slice peaches; toss with lemon juice if desired.
- Cream butter and brown sugar in a large bowl until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- In another bowl, whisk together flour and baking powder; gradually add to the wet mixture.
- Fold in half of the peach slices into the batter.
- Pour batter into prepared pan, smooth the top, and bake for 35-40 minutes or until golden brown.
