Ingredients

  • 45 medium-sized fresh carrots, grated
  • 4 cups whole milk
  • 3/4 cup sugar (adjust to taste)
  • 2 tablespoons ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • Chopped nuts (almonds or pistachios)
  • Raisins (optional)

Instructions

  1. Grate the fresh carrots until you have about 4 cups.
  2. In a heavy-bottomed pan, heat 1 tablespoon of ghee over medium heat. Add the grated carrots and sauté for about 10 minutes until softened.
  3. Pour in the whole milk and add the sugar. Simmer on low heat for 30-40 minutes until thickened.
  4. Stir in the cardamom powder and cook for an additional 5 minutes.
  5. Mix in chopped nuts and raisins, if using, and cook for another 5 minutes.
  6. Serve warm or chill in the fridge before serving.
