- 3–4 Boneless, Skinless Chicken Breasts
- 1 cup Fresh Mozzarella Cheese, shredded
- 1 cup Marinara Sauce
- 1/2 cup Parmesan Cheese, freshly grated
- Fresh Basil Leaves, chopped
- 1 cup Panko Breadcrumbs
- Salt and Pepper to taste
- 1 tsp Garlic Powder
- 1 tsp Italian Seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice each chicken breast horizontally to form pockets.
- In a bowl, mix mozzarella cheese with chopped basil and garlic powder; fill chicken pockets with this mixture.
- Secure the openings with toothpicks or kitchen twine.
- Coat the stuffed chicken in beaten eggs, then dredge in panko breadcrumbs mixed with Italian seasoning.
- Place in a baking dish topped with marinara sauce and sprinkle additional mozzarella and parmesan on top.
- Bake for 25-30 minutes until golden brown and cooked through.
