- 4 boneless, skinless chicken breasts (approx. 1 lb)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large yellow onion, sliced
- 8 oz provolone cheese, sliced
- 4 hoagie rolls
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Prepare your ingredients by slicing chicken into thin strips and chopping bell peppers and onions.
- In a large skillet over medium heat, add olive oil. Once hot, sauté onions and bell peppers until soft (about 5-7 minutes).
- Push the vegetables to one side of the skillet and add chicken strips on the other side. Season with garlic powder, salt, and pepper. Cook until chicken is no longer pink (about 8-10 minutes), mixing everything together.
- Reduce heat to low and lay provolone slices over the mixture. Cover until cheese melts (3-5 minutes).
- Slice hoagie rolls open but not all the way through. Use a spatula to fill each roll with the cheesy chicken mixture.
- Serve with chips or a side salad.
