Instructions
- Rinse the Arborio rice under cold water until the water runs clear.
- In a medium saucepan, combine rinsed rice, coconut milk, sugar, and salt. Add the cinnamon stick.
- Bring the mixture to a gentle simmer over medium heat, stirring frequently for about 25 minutes until the rice is tender and creamy.
- Remove from heat, stir in vanilla extract, and adjust sweetness if desired.
- Serve warm or chill in the fridge before serving. Top with fresh fruit for added flavor and color.
