- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 16 oz full-fat cream cheese, softened
- 2 large eggs, at room temperature
- 2 tsp coffee extract
- ½ cup caramel sauce (store-bought or homemade)
- Whipped cream (optional)
Instructions
- 1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- 2. In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the prepared pan.
- 3. Beat softened cream cheese until smooth. Add eggs one at a time, mixing well after each addition.
- 4. Mix in coffee extract thoroughly until fully incorporated.
- 5. Pour the filling over the crust and spread evenly. Bake for 25-30 minutes until set but slightly jiggly in the center.
- 6. Cool completely at room temperature, then drizzle warm caramel sauce on top and refrigerate for at least 3 hours before serving.
