- 2 cups fresh sweet corn (about 3 ears)
- 1/2 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 small jalapeño pepper, minced (seeds removed for less heat)
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- If using fresh corn, boil or grill until tender. Allow it to cool before removing the kernels.
- Finely chop the red onion and mince the jalapeño.
- In a large bowl, combine corn kernels, red onion, cilantro, and jalapeño. Toss gently.
- Squeeze lime juice over the mixture and season with salt and pepper to taste.
- Serve immediately with tortilla chips or as a topping for tacos or grilled meats.
