- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can black beans, rinsed
- 2 cups low-sodium chicken broth
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- Fresh cilantro (optional)
Instructions
- In a large pot over medium heat, brown the ground beef while breaking it apart with a wooden spoon.
- Add the chopped onion and minced garlic; sauté until the onions are translucent.
- Stir in the taco seasoning until well combined.
- Pour in the diced tomatoes and rinsed black beans; mix well.
- Add chicken broth and bring to a gentle boil. Reduce heat and simmer for 15-20 minutes.
- Stir in sour cream until smooth and creamy.
- Serve hot, topped with shredded cheddar cheese and fresh cilantro if desired.
