- 1 lb boneless, skinless chicken breasts
- 2 tbsp ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tbsp olive oil
- 4 soft sandwich buns
- Lettuce and tomato (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, coat chicken breasts with ranch seasoning until evenly covered.
- Set up a breading station: dip each chicken breast in beaten eggs, then coat with panko breadcrumbs.
- Place breaded chicken on the baking sheet and drizzle with olive oil. Bake for 25-30 minutes until golden brown.
- Sprinkle shredded cheese on top of chicken and return to oven for another 5-7 minutes until cheese is bubbly.
- Assemble sandwiches by layering buns with lettuce (if desired), crispy chicken, tomato slices, and additional cheese.
