- 1 cup diced bell peppers (mix of colors)
- 1 cup diced sweet onion
- 3 garlic cloves, minced

- 2 tbsp tomato paste
- 4 soft burger buns
- 2 tbsp hot sauce (to taste)
- 1 tbsp brown sugar
- 2 tbsp fresh lemon juice
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and bell peppers; sauté until softened (5-7 minutes).
- Stir in minced garlic and Cajun seasoning; cook until fragrant (about 1 minute).
- Add chicken breasts and pour in chicken broth. Simmer until chicken is tender and cooked through (15-20 minutes).
- Remove chicken from skillet and shred using two forks; return to skillet.
- Mix in tomato paste, hot sauce, brown sugar, and lemon juice; let simmer for another 5 minutes.
- Serve generous portions on soft buns and customize with toppings like pickles or coleslaw.
