- 1 lb lean ground beef
- 16 oz Velveeta cheese, cubed
- 10 oz can Ro-Tel diced tomatoes (mild or spicy)
- 1 medium onion, chopped
- 1 tsp garlic powder
- 2 tbsp fresh cilantro (optional)
- Tortilla chips for serving
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
- Add the chopped onion to the skillet and sauté until translucent.
- Stir in the garlic powder and mix well.
- Reduce heat to low and add the Velveeta cheese cubes along with the drained Ro-Tel tomatoes. Stir continuously until melted and combined into a creamy dip.
- Taste and adjust seasoning as desired, adding hot sauce for extra spice if preferred.
- Transfer to a serving bowl, garnish with cilantro, and serve warm with tortilla chips.
