Ingredients

  • Canned chickpeas
  • Fresh parsley
  • Garlic cloves
  • Ground cumin
  • Pita bread
  • Tahini paste
  • Lemon juice

Instructions

  1. Drain and rinse canned chickpeas under cold water. Soak briefly for easier blending.
  2. In a food processor, blend chickpeas, parsley, garlic, cumin, salt, and pepper until coarse.
  3. Shape the mixture into small balls or patties using damp hands.
  4. Heat oil in a skillet over medium heat and fry falafels for 3-4 minutes on each side until golden brown.
  5. For the garlic tahini sauce, whisk together tahini, lemon juice, minced garlic, salt, pepper, and enough water until smooth.
  6. Assemble wraps by spreading sauce on warm pita bread; add falafels and fresh veggies; drizzle more sauce on top.
