Instructions
- Drain and rinse canned chickpeas under cold water. Soak briefly for easier blending.
- In a food processor, blend chickpeas, parsley, garlic, cumin, salt, and pepper until coarse.
- Shape the mixture into small balls or patties using damp hands.
- Heat oil in a skillet over medium heat and fry falafels for 3-4 minutes on each side until golden brown.
- For the garlic tahini sauce, whisk together tahini, lemon juice, minced garlic, salt, pepper, and enough water until smooth.
- Assemble wraps by spreading sauce on warm pita bread; add falafels and fresh veggies; drizzle more sauce on top.
