Instructions

  1. In a food processor, blend chickpeas, parsley, garlic, cumin powder, coriander powder, salt, and pepper until coarsely mixed.
  2. Stir in baking powder and form small balls or patties.
  3. Heat oil in a skillet over medium heat or preheat oven to 375°F (190°C). Fry falafels until golden brown or bake for about 25 minutes on a parchment-lined sheet.
  4. While falafels cook, whisk tahini with lemon juice, garlic powder, salt, and water until smooth.
  5. Warm pita bread slightly; fill with falafels, fresh veggies, and drizzle with tahini sauce before wrapping.
