- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup fresh parsley, chopped
- 3 garlic cloves
- 2 tsp cumin powder
- 2 tsp coriander powder
- 1 tsp baking powder
- Salt and pepper to taste
- 4 pita breads
- 1/4 cup tahini sauce
- Assorted fresh vegetables (lettuce, tomatoes, cucumbers)
Instructions
- In a food processor, blend chickpeas, parsley, garlic, cumin powder, coriander powder, salt, and pepper until coarsely mixed.
- Stir in baking powder and form small balls or patties.
- Heat oil in a skillet over medium heat or preheat oven to 375°F (190°C). Fry falafels until golden brown or bake for about 25 minutes on a parchment-lined sheet.
- While falafels cook, whisk tahini with lemon juice, garlic powder, salt, and water until smooth.
- Warm pita bread slightly; fill with falafels, fresh veggies, and drizzle with tahini sauce before wrapping.
