- 2 cups freshly grated carrots (about 4 medium carrots)
- 1 cup condensed milk
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup cream cheese frosting (store-bought or homemade)
Instructions
- 1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
- 2. In a mixing bowl, whisk together flour, sugar, baking powder, and cinnamon.
- 3. In another bowl, mix condensed milk, eggs, vanilla extract, and grated carrots until smooth.
- 4. Gently fold the wet ingredients into the dry mixture using a spatula.
- 5. Divide batter evenly between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
- 6. Allow cakes to cool for 10 minutes before transferring them to wire racks. Once cooled completely, frost between layers and on top with cream cheese frosting.
