- 3–4 ripe bananas (mashed)
- 1 ½ cups gluten free all-purpose flour
- ½ cup brown sugar
- ½ cup white sugar
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- ½ cup melted butter or coconut oil
- 1 tsp vanilla extract
- 1 tsp cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mash the ripe bananas until smooth with some chunks.
- Mix in melted butter, eggs, and vanilla until combined.
- In another bowl, whisk together flour, sugars, baking powder, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Pour batter into the prepared pan and bake for 50-60 minutes until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a wire rack to cool completely before slicing.
