- 4 boneless, skinless chicken breasts (approx. 600g)
- 1 medium ripe pineapple (about 900g)
- 1 red bell pepper (150g)
- 1 yellow bell pepper (150g)
- 1 medium red onion (100g)
- ¼ cup low-sodium soy sauce (60ml)
- 2 tbsp honey (30g)
- 1 tsp garlic powder (3g)
- 2 tbsp fresh lime juice (30ml)
- Wooden or metal skewers
Instructions
- Create the marinade by combining soy sauce, honey, garlic powder, and lime juice in a bowl.
- Cut the chicken into bite-sized cubes and chop the pineapple, bell peppers, and onion into similar sizes.
- Marinate the chicken and pineapple in a resealable bag or bowl for at least 30 minutes.
- Thread marinated chicken, pineapple, bell peppers, and onion onto skewers.
- Preheat grill to medium-high heat (400°F/200°C) and grill skewers for 12-15 minutes, turning occasionally until chicken is cooked through.
