- 4 boneless, skinless chicken breasts
- 1 cup salsa verde (homemade or store-bought)
- 8 oz pepper jack cheese (sliced)
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro (optional, for garnish)
Instructions
- Preheat your grill to medium-high heat (about 375°F) and lightly oil the grates.
- Drizzle olive oil over the chicken breasts in a large bowl, then season generously with salt, pepper, and garlic powder.
- Grill the chicken for 6-7 minutes per side until cooked through (internal temperature of 165°F).
- In the last few minutes of grilling, spoon salsa verde on top of each breast and add pepper jack cheese slices.
- Once cooked, remove from the grill, squeeze lime juice over the chicken, garnish with cilantro if desired, and serve immediately.
