- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 ½ cups sponge cake, cubed
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon pure vanilla extract
Instructions
- Wash and pat dry the mixed berries.
- If making sponge cake from scratch, preheat oven to 350°F (175°C) and bake according to your recipe; alternatively, use store-bought.
- In a mixing bowl, whip together heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- In a serving dish, layer sponge cake pieces followed by whipped cream and mixed berries. Repeat layers until ingredients are depleted.
- Finish with a dollop of whipped cream and a sprinkle of fresh berries on top.
