Lemon Truffles are a delightful fusion of creamy white chocolate and zesty lemon that will brighten any occasion. Easy to make, these treats are sure to impress!

Ingredients

  • 1 cup white chocolate chips
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • Coconut oil (optional)

Instructions

  1. In a saucepan over low heat, melt heavy cream and white chocolate chips until smooth, stirring continuously.
  2. Remove from heat and mix in lemon zest and juice. Gradually add powdered sugar to taste.
  3. Transfer the mixture to a bowl and refrigerate for 30-60 minutes until firm.
  4. Scoop tablespoons of the mixture and roll into balls.
  5. Melt additional white chocolate chips (and coconut oil if desired) in the microwave.
  6. Dip each truffle into the melted chocolate, coating well, then place on parchment paper to set.
