- 1 cup white chocolate chips
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- Coconut oil (optional)
Instructions
- In a saucepan over low heat, melt heavy cream and white chocolate chips until smooth, stirring continuously.
- Remove from heat and mix in lemon zest and juice. Gradually add powdered sugar to taste.
- Transfer the mixture to a bowl and refrigerate for 30-60 minutes until firm.
- Scoop tablespoons of the mixture and roll into balls.
- Melt additional white chocolate chips (and coconut oil if desired) in the microwave.
- Dip each truffle into the melted chocolate, coating well, then place on parchment paper to set.
