Ingredients
- 1 lb lean ground beef
- 8 corn tortillas
- 1 can (15 oz) black beans, rinsed
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 2 tsp chili powder
- 1 tsp cumin
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup bell peppers, diced
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- In a large skillet over medium heat, sauté diced onions and minced garlic until translucent (about 3-4 minutes).
- Add the ground beef along with chili powder and cumin; cook until browned (about 5-7 minutes).
- Layer the bottom of the baking dish with tortillas, followed by half of the beef mixture, black beans, bell peppers, sour cream dollops, and shredded cheese.
- Repeat layering: more tortillas, remaining beef mixture, beans, peppers, sour cream, and top with cheese.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden brown. Allow cooling before slicing.
