Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners.
- In a large bowl, whisk together flour, baking powder, cinnamon, granulated sugar, and brown sugar.
- In another bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
- In a separate bowl, beat cream cheese with a bit of sugar until fluffy.
- Combine wet ingredients with dry ingredients gently until just mixed—don’t overmix.
- Fill each muffin cup halfway with batter; add dollops of cream cheese mixture on top before covering with more batter.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
