- 2 tablespoons cornstarch
- Ice water as needed
Instructions
- Preheat oven to 425°F (220°C).
- In a bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Gradually add ice water until dough forms; chill for 30 minutes.
- Roll out one disk into a circle and fit it into a pie pan.
- In another bowl, combine fruits with lemon juice, sugar, and cornstarch.
- Pour the fruit mixture into the crust; cover with a second rolled-out disk or lattice design.
- Bake for 45-50 minutes until golden brown and juices bubble.
