Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream together the butter and granulated sugar until fluffy (about 3 minutes).
- Beat in eggs one at a time, followed by vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually mix dry ingredients into wet ingredients until just combined.
- Chill the dough in the refrigerator for about 30 minutes for best results.
- Scoop dough into balls, roll in powdered sugar, and place on baking sheets about 2 inches apart.
- Bake for 10-12 minutes until edges are set but centers remain soft. Cool slightly before serving.
