- 4 bell peppers (red, yellow, or green)
- 1 cup halal mozzarella cheese, shredded
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
- Mix in the ground meat and cook until browned. Stir in cooked rice, spices, and tomato sauce; combine thoroughly.
- Stuff each bell pepper with the meat-rice mixture and top with shredded halal cheese.
- Place stuffed peppers upright in a baking dish with a little water at the bottom. Cover with foil and bake for 30 minutes; uncover for an additional 10 minutes.
