- 8 oz penne pasta
- 1/2 cup sun-dried tomatoes (oil-packed)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Cook penne according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute.
- Add sun-dried tomatoes to the skillet, sautéing for an additional 2 minutes until softened.
- Pour in heavy cream while stirring gently. Simmer for about 3 minutes until slightly thickened.
- Stir in grated Parmesan cheese until melted and blended smoothly into the sauce. Season with salt and pepper to taste.
- Add the drained pasta to the skillet, tossing well to coat in the creamy sauce. Garnish with fresh basil before serving.
