- 8 oz pasta (spaghetti or penne)
- 4 ripe tomatoes, diced
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- ¼ cup fresh basil, torn
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Prepare your pasta by boiling salted water in a large pot. Cook pasta according to package instructions until al dente.
- In a skillet over medium heat, add olive oil and sauté minced garlic for about 30 seconds until fragrant.
- Add diced tomatoes, season with salt and pepper, and cook until softened (about 5-7 minutes).
- Drain the pasta, reserving some cooking water, and combine it with the tomato sauce in the skillet.
- Toss in torn basil leaves and grated Parmesan cheese until well mixed.
- Serve hot with extra cheese on top if desired.
