- 4 medium sweet potatoes
- 4 tbsp unsalted butter
- 1/2 cup sour cream (or Greek yogurt)
- 1 tsp ground cinnamon
- 2 tbsp light brown sugar
- Salt and pepper to taste
- 2 tbsp chopped chives or green onions
Instructions
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly.
- Bake the sweet potatoes on a parchment-lined baking sheet for 45-60 minutes until fork-tender.
- Allow the potatoes to cool slightly, then slice them open lengthwise and scoop out most of the flesh into a mixing bowl.
- Add butter, sour cream, brown sugar, cinnamon, salt, and pepper to the scooped flesh; mash until smooth.
- Refill the potato skins with the mixture, top with chives or green onions if desired, and bake for an additional 15-20 minutes until golden brown.
