Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
- Mix in the lemon zest and lemon juice until fully incorporated.
- In a separate bowl, whisk together the sifted flour and baking powder.
- Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined.
- Scoop rounded balls of dough onto the prepared baking sheet about 2 inches apart.
- Bake for 10-12 minutes until edges are slightly golden but centers remain soft. Dust with powdered sugar once cooled.
