- 2 medium zucchinis (about 2 cups grated)

- 1 tsp baking powder
- 2 large eggs (room temperature)
- 1/3 cup vegetable oil (or melted coconut oil)
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (walnuts or pecans) (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
- Grate the zucchinis and squeeze out excess moisture using cheesecloth or paper towels.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and a pinch of salt.
- In another bowl, beat the eggs lightly before adding oil and vanilla extract; whisk until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined. Add in nuts if desired.
- Pour the batter into the prepared pan and bake for 25-30 minutes until golden brown; a toothpick should come out clean.
