- 2 cups grated zucchini (about 1 medium zucchini)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- 1 tsp vanilla extract
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Grate zucchini and squeeze out excess moisture using a clean towel.
- In a bowl, mix flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, beat eggs and oil; stir in zucchini and vanilla.
- Gradually fold dry ingredients into wet mixture until just combined.
- If desired, add nuts and gently mix.
- Pour batter into prepared pan and bake for 50-60 minutes until a toothpick comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack.
