- 2 medium zucchinis (grated)

- 1 tsp cinnamon
- ½ tsp salt
- 1 tsp vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- Cooking spray or butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Grate zucchinis and squeeze out excess moisture using a towel.
- In one bowl, whisk together flour, baking soda, cinnamon, and salt. In another bowl, beat sugar and eggs until light and fluffy.
- Stir grated zucchini and vanilla into the egg mixture until combined.
- Gradually fold dry ingredients into the wet mixture without overmixing. Add nuts if desired.
- Pour batter into the loaf pan and bake for 55-65 minutes until golden brown and a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
